Salad Bar Characteristics in Relation to Diet Quality of Schoolchildren

This study examined the relationship between the appearance of salad bars and students’ fruit and vegetable consumption at lunch. In their results, the authors found that on average students in schools with visually appealing salad bars consumed more greens and beans than students in schools with plain-looking salad bars. Based on these results, districts should consider making their salad bar offerings more inviting in order to promote children’s vegetable consumption at school.
