Instructions

Pre-Preparation

Potatoes diced, cooked, with skin yield 99%

1. Preheat oven to 375 degrees F.
2. Wash and scrub potatoes.
3. Chop potatoes into large dice/wedges.

Preparation

1. Toss cut potatoes with oil & salt.
2. Place 8 lb. of potatoes per lined sheet pan.
3. Roast for about 40 minutes at 375 degrees, or until internal temp reaches 140 degrees F. Potatoes should be soft and fluffy on the inside.
4. For best quality, serve immediately. Otherwise, hold hot, uncovered above 140 degrees F until service.
