Pre-Preparation
Cooked zucchini yield = 86%
1. Cut zucchini into 1/4-inch half moons.
2. Preheat oven to 350 degrees F.
Preparation
1. In large mixing bowl, toss zucchini with oil, red pepper flakes, and salt.
2. Mix thoroughly.
3. Put seasoned zucchini on parchment lined sheetpans making sure the half moons don’t overlap.
4. Roast zucchini at 350 degrees for about 12-15 minutes or until internal temperature reaches 165 degrees.
If preparing ahead or transporting out:
3. Place 2.5lb of seasoned zucchini into plastic bags.
4. Label, date, and prepare for transport.
