Instructions

Pre-Preparation

1. Preheat oven to 350 degrees F.

Preparation

1. Combine rice and water in 4″ full size hotel pans (Ratio = 1 part rice to 1 part water).
2. Cover the hotel pans with parchment and foil and bake for 45 minutes at 350 degrees F.
Note: Alternatively, cook rice in steamer for 30 minutes or until water has been fully absorbed.

Serving

Serving options:
1. If using rice in another recipe, cool rice on sheetpans per HACCP SOP and store, covered, in the walkin.
2. If using for service, transfer to 2-inch hotel pans (7lb 13oz per pan) and hold hot according to HACCP SOP.

Serving = 1/2 Cup (2.5oz.)
