Instructions

Pre-Preparation

Yields
Potatoes: 99% unpeeled
Celery: 83%.
Onions: 88%.

1. Wash and scrub the potatoes before dicing.
2. Using hobart, cut potatoes into large dice then steam for 15-20 minutes in perforated pan until just tender. Cool to 41 degrees F as per HACCP SOP.
3. Dice celery and onions.

Preparation

1. Add all ingredients to a large bowl.
2. Mix everything lightly until well blended.

Serving = 1/2 Cup
