Instructions
Pre-Preparation
1. Preheat oven to 375 degrees F.
Preparation
1. Combine the yeast, first sugar amount, and first water amount (Note: The water should be warm). Set aside to bloom for about 5-10 minutes.
2. While the yeast is blooming, combine all other ingredients (except for the rosemary and second olive oil amount) in a bowl of a large mixer.
3. Once bloomed, add the yeast mixture to the other ingredients in the bowl.
4. Using a dough hook on the mixer, combine all ingredients together for about 5 minutes.
5. Dump the dough onto a countertop to rest for 5 minutes.
6. Using the second oil amount, spread 3 Tbsp. of oil onto each half sheet pan.
7. Spread about 4 1/3 lb. of the dough onto each prepared half sheet pan.
8. Flip the dough over and spread out again.
9. Using your fingertips, create dimples in the dough.
10. Sprinkle the top of each dough with 2 Tbsp. of dried rosemary per pan.
11. Place the pans in a warm or humid area and allow to proof for about an hour or until the dough has noticeably risen.
12. Onced proofed, bake at 375 degrees for about 25 minutes or until golden in color.
13. Cut each half sheet pan into 24 equal pieces.
