Instructions

Pre-Preparation

Yield Pork 58%
Yield Ham 90%

1. Thaw pork for 2-3 days before cooking under refrigeration.
2. Preheat oven to 300 degrees F.
3. Place 2 defrosted pork roasts per 4″ hotel pan.
4. Mix all broth ingredients together: water, cumin, salt, pepper, & first portion of mustard.
5. Pour over the defrosted pork roasts in hotel pans, filling 3/4 of the way up the pan.
6. Cover with parchment and foil.
7. Cook for 4-6 hours at 300 degrees F. until a mininum internal temperature of 145 degrees is reached.
8. Shred when pork is still hot.
9. Strain liquid over pork, cool per HACCP SOP, and chill in refrigerator overnight.
10. Slice ham into 1/2 oz. slices.
11. Slice cheese into 1/4 oz. slices.

Preparation

Assemble the sandwiches:
1. Spread 1 Tbsp of mustard on the bun.
2. Add 1 slice ham at 1/2 oz each
3. Add 1 slice swiss cheese at 1/4 oz each
4. Add 2 oz of shredded pork
5. Add 2 pickles
6. Put the assembled sandwiches on sheet pans - around 50 sandwiches per sheet pan.
7. Cook sanwiches at 350 degrees for about 15-20 minutes to melt the cheese and reach an internal temperature of 165 degrees F.
