1. Large dice the squash.
2. Dice the green pepper, tomato, and onion.
3. Chop the cilantro.
4. Mince garlic.
Preparation
1. Heat oil in a sauté pan or tilt skillet.
2. Add chopped garlic, saute until just until lightly browned and fragrant, about 1 minute.
3. Add corn and sauté until it begins to brown, about 2 minutes.
4. Add green peppers, onion, and squash, stirring constantly until squash is fork tender, about 10 minutes.
5. Add tomato and cilantro.
6. Add Italian seasoning, salt, and vegetable broth.
7. Bring to a simmer and cook until an internal temperature of 140 degrees or above is reached.
