1. Preheat oven to 350 degrees F.
2. Wash, core, and dice apples.

Preparation

1. In a mixer, cream together the oil and sugar until the mixture becomes slightly thicker and smoother, with a cohesive, grainy texture and no visible clumps of sugar.
2. Add eggs to the mixture and beat for 1 minute.
3. Add flour, baking soda, diced apples, vanilla, cinnamon, and salt.
4. Mix until just the ingredients are combined.
5. Pour 5 lbs 7 oz of batter into each hotel pan.
6. Bake for approximately 30 minutes or until a toothpick inserted comes out clean.
7. Once baked, cut each pan into 25 servings (5x5).

Holding Instructions
The apple cake can be held at room temperature for up to 4 hours. Cover it loosely with plastic wrap or foil to prevent it from drying out.

Serving Instructions
One piece, serve using a spatula.
