Instructions

Pre-Preparation

1. Preheat oven to 375 degrees F.
2. Prepare half sheet pans by covering with parchment paper or spraying with pan spray.
3. Chop the spinach.
4. Dice the bell peppers.

Preparation

1. Combine all the ingredients in a large mixing bowl.
2. Using a whisk, mix all the ingredients together until well combined.
3. Pour 2lb. 13oz. of egg mixture into each half sheet pan.
4. Bake at 375 degrees for about 12 minutes or until the egg has pulled slightly away from the pan edges and the middle is firm.
5. Cut each half sheet pan 6x4 to create 24 pieces that are approximately 1 3/4 oz.
