Instructions
Pre-Preparation
1. Cut chicken thighs into strips.
2. Wash and dice the onion.
3. Wash and mince ginger and garlic.
Preparation
1. In a tilt skillet, heat oil and butter over medium-high heat.
2. Add onions and saute until slightly transluscent, about 5-7 minutes.
3. Add ginger and garlic and saute for 1-2 minutes or until fragrant.
4. Add chicken and all spices and saute until everything is cooked through, about 20 minutes, or until it reaches an internal temp of 165 degrees.
5. Add the tomato sauce and heat for about 1-2 minutes.
6. Add the yogurt and simmer for about 10 minutes.
7. Place in 4″ hotel pan for service.
8. Cover and hold at 140 degrees F.
