1. Prepare the sweet and sour sauce:
a. Using burr mixer, mix together the ketchup, honey, soy sauce, vinegar, and ginger.
b. Set aside for later use.
2. Preheat oven to 350 degrees.
Preparation
1. Drain tofu and cut each block into 1 oz portions.
2. Place the pieces close together but not overlapping onto parchment lined hotel pans.
3. Pour the sweet and sour sauce over the tofu, spread evenly.
4. Bake in 350 degree oven for about 15 - 20 minutes until internal temperature reaches 140 degrees.
