Instructions

Pre-Preparation

Cooked vegetable yield:
Red bell peppers: 80%
Onion: 65%
Jalapeno: 98%

1. Wash the bell peppers, jalapenos, onion, and basil.
2. Dice the red bell peppers.
3. Chop the jalapenos.
4. Roughly chop the basil.
5. Mince the garlic.
6. Dice onions.

Preparation

7. Drain the tofu and press out excess liquid. Dice the tofu into small, bite-size pieces. Tofu pieces should be similar to crumbled meat.
8. In a sautee pan over medium heat, sautee onions, garlic, jalapenos, and bell peppers for 5 minutes, or until fragrant and onions are translucent.
9. Add the tofu to the vegetable mixture.
10. Add the fish sauce, soy sauce, and seasonings to the tofu and vegetables.
11. Stir and cook for 5 minutes, or until tofu is cooked and flavors are combined.
12. Put in 4″ hotel pan and hold hot until service.

Serving

Serving: On the serving line, fill each tortilla with 3 oz tofu and vegetable mixture.
