Instructions

Pre-Preparation

1. Preheat oven to 350 degrees F.
2. Cube bread.
3. Melt butter.

Note: Can use saved bread ends from sandwiches

Preparation

1. In a large bowl, whisk together the melted butter, salt, milk, cinnamon, egg, and brown sugar until everything is well combined into a homogenous mixture.
2. Add the cubed bread to the mixture and gently combine until all bread pieces are well coated.
3. Portion 8 lbs. 12 oz. of the bread mixture into each hotel pan and press down firmly. Cover with parchment and foil.
Note: This process can be the day of or the day before service.
4. Bake at 350 degrees for 15 minutes covered until an internal temperature of 165 degrees F. is reached.
5. Uncover and cook an additional 15 minutes uncovered until golden brown.
6. Cut each pan 6x4 to create 24 pieces weighing 3.75oz each.
