Instructions

Pre-Preparation

Note: Thaw potatoes in walk-in overnight.

1. Preheat oven to 350 degrees F.
2. Prep vegetables:
a. Dice red bell pepper.
b. Slice green onion.

Preparation

1. In a bowl, combine shredded potatoes, bell pepper, and 2/3 of the cheese (save the rest for the top of the casseroles) and stir to combine.
2. Add the combined potatoes, pepper, and cheese mixture to hotel pans. Each hotel pan will get about 6lb. 2 oz. of the mixture.
3. In another bowl, whisk together eggs, milk, salt, and pepper.
4. Pour egg mixture over the potatoes, pepper, and cheese mixture in the hotel pans. Each pan will get 4lb. 12oz. of the egg mixture.
5. Top each hotel pan with 2 cups of cheese and 2 oz. of sliced green onion.
6. Bake uncovered in preheated oven for about 1 hour, or until the top is golden.
7. Cut each hotel pan 6x5 to create 30 pieces. 1 hotel pan = 30 servings.
