Instructions

Pre-Preparation

1. Make the marinara sauce:
ONION YELLOW (First amount)
CELERY
CARROT
GARLIC
ZUCCHINI
OIL OLIVE CANOLA
SALT
SPICE PEPPER
SPICE BASIL
SPICE OREGANO
TOMATOES DICED
TOMATO SAUCE
a. Dice the onions, celery, and carrots.
b. Mince the garlic.
c. Small dice the zucchini.
d. Heat oil in large pot, tilt skillet or kettle over medium heat.
e. Sauté onions until translucent.
f. Add celery, carrots, and garlic and cook until soft, about 15 minutes, stirring occasionally.
g. Add zucchini, salt, pepper, dried basil, and oregano, stir to combine.
h. Add diced tomatoes and tomato sauce. Bring to a boil, reduce heat, cover and simmer until all vegetables are soft, about 40 minutes.
i. Use immersion blender to combine all ingredients and blend until smooth.
j. Add up to 3 quarts of water to thin as needed. If hot holding, use hot water, if cooling, blend in ice or cold water.
k. Blend any fresh herbs in now.
l. Adjust seasonings to taste.
m. Hot hold above 135 degrees F.
n. If preparing ahead of time or to send out: Cool according to HACCP procedure, to 75 degrees F. within 2 hours, then 41 degrees F. within 4 hours.

2. Dice second onion amount.

Preparation

1. In a tilt skillet, saute Beyond Beef for about 15 minutes over medium-high heat until an internal temperature of 165 degrees F. is reached.
2. Add diced onion and saute until onions are transclucent.
3. Add all other ingredients: Garlic powder, dry mustard, brown sugar, water, ketchup, and homemade marinara sauce.
4. Stir to combine, then bring to a simmer for 20-30 minutes.

Serving

Serving: 3oz of Beyond Beef on a hamburger bun
