Project Description

A Chef at School, Rainbow Days, Guest Speakers, and Tastings Add Food Choices to Students’ Health Education

Eldon Elementary’s week of planned activities in the cafeteria celebrated Every Kid Healthy Week, with a Chef At School event, Rainbow Days at the salad bar, fruit and vegetable tastings, and guest speakers.

The guest chef educated Eldon Elementary’s students about the importance of fruits and vegetables in their diet. They also demonstrated how to make delicious (and nutritious) homemade sweet potato fries. Other guest speakers gave presentations on “eating the rainbow” and the benefits of eating a variety of colors of fruits and veggies.

Eldon Elementary stocked the salad bar with a rotating supply of fruits and vegetables that many students had never tasted, or even seen before: star fruit, coconut, bean sprouts, plums, pears, avocado, and more. School staff encouraged students to create a colorful plate and to try new things.

Successes

  • The majority of students discovered they loved new vegetables they had never tried before.
  • Students were engaged with guest speakers, asking questions and actively learning.

Challenges

  • The school struggled to plan their events around standardized testing in the spring.
  • Eldon found it difficult to designate enough time and staff labor to prepare produce for tastings and demonstrations.
